Five micro-lots of controlled, inoculated anaerobic fermentation produced in collaboration with farmers from two villages to offer new flavors from wet hulled and natural beans.
Anaerobic fermentation, when properly managed and controlled, allows to highlight and improve the specific character of each coffee varieties and process. This is what JYN offers with the new Fermentation series.
From the traditional and typical Indonesian wet hulled process, and after two years of test, JYN proudly introduces
- Loka Tua: controlled inoculated anaerobic fermentation wet hulled. Spicy with a touch of cytrus and carrying all the aroma from Flrores.
- Reba: controlled inoculated anaerobic fermentation wet hulled. Apparently the same as Loka Tua, but fermentation allows many different way to control the process, This is why Loka Tua and Reba are so unique and different. Reba is more bright and fruity and with a long lasting aftertaste.
- Boku: controlled inoculated double anaerobic fermentation. The most complex. A bridge between wet hulled and natural. Still spicy and bright but with a stronger body and a fruity touch
Three different coffees based on the cherries from a single farmer and all based on wet hulled process, you can feel it but the control of each step of processing allows the creation of three distinct profiles.
From the natural process here
- Pink Dragon: controlled inoculated anaerobic fermentation natural. Clean, fruity and sweet with a touch of liqueur. The fermentation stays in the background, you can feel it, but it doesn't overwhelm the original flavor and aroma from the natural process
- Pink Dragon: controlled inoculated anaerobic fermentation natural. Another example of how controlling fermentation and process can change the final result. The Green Dragon is more fruity and long lasting than its Pink brother. You will decide which on you prefer.
